Canning & Preserving

Seal food in jars, heat them through, and the shelf holds them a year

Home canning follows tested recipes. Acidity, jar size and local elevation affect the method and processing time. A batch of jam can be a first project; low-acid foods such as beans and meat need a suitable pressure canner rather than a water bath. A sealed lid alone does not establish that processing was safe.

First stepChoose a tested jam recipe from a food-preservation authority. Match the jar size and processing time to your elevation, make a small batch, then check seals after cooling.
