Cheesemaking

Curdle milk, press the whey out, and the simplest cheese is done

The easy end is same-day: heat milk, add acid or rennet, drain the whey off the curds, and an hour later you have ricotta or paneer. Above that sits aged cheese, which wants months at steady temperature and humidity and is genuinely hard at home, so most people stay with the fresh kind. Ultra-pasteurised milk will not set.

First stepHeat a litre of pasteurised milk, stir in lemon juice until it curdles, drain it through cheesecloth, and have ricotta within the hour.
