Espresso

Nine bars, thirty seconds, and a small error ruins the shot

What separates it from pour-over is how little slack there is: pressure and time are fixed, so dose and grind are the only variables, and a small miss gives you either sour water or burnt bitterness. Expect to waste beans for a few days while dialling in. The machine plus a grinder good enough to match it is the real barrier.

First stepWith an espresso machine and a capable grinder, fix your dose, adjust only the grind, and dial in a shot that runs in 25 to 30 seconds.
